This curry does not require red chilli powder to be added. You can prepare it using green chilli.
It’s got a unique flavour and can be prepared very easily.
You can serve it as a side dish with Puri, Parotta etc.
Green chilli 3
Chopped ginger 1 tablespoon
Carrot 1/2 finely chopped
Turmeric 1/4 teaspoon
Corn flour 1 teaspoon
Sugar 1/4 teaspoon
Water as needed
Salt as needed
Mustard 3/4 teaspoon
Urad dal 1 teaspoon
Channa dal 1 tablespoon
Curry leaves 1 srig
Oil 1 tablespoon
Wash and cook potatoes with water. Cool down, peel and keep it roughly mashed. Just break into pieces roughly.
Heat kadai with oil and temper with the items given under ‘To temper’.
Add thinly sliced onion, green chillies, ginger and fry until transparent. Take care not to burn it. Add carrots and fry for one more minute in medium flame.
Add 2 cups water, turmeric, salt and sugar. Bring to boil and add the mashed potatoes.
Boil for few minutes in medium flame until the masala gets thick in consistency. You can add corn flour dissolved in water towards end to make the masala look thick.
You can add more vegetables like peas, beans… etc along with carrot.
