Puliyodharai Tamarind Rice

Puliyodharai Tamarind Rice Tamarind rice is one of the delicious South Indian rice preparations. Let me write how to make this delicious rice recipe.

 


Recipe

Ingredients

for powder
Sesame seeds – 1 tablespoon

for powder – 2
Chana dal 1 teaspoon
Urad dal 1 teaspoon
Cumin seeds – 1/2 teaspoon
Peppercorns – 1/4 teaspoon
Fennel seeds – 1/2 teaspoon
Mustard seeds – 1/4 teaspoon
Dried red chili – 2
Curry leaves – 5 – 6

Other Ingredients
Tamarind paste – 2 teaspoon
Hot Water – 1 cup
cooked and cooled rice – 3 cups, (Cook the rice and let it cool. If you use hot rice then rice grains will break while you mix.)
Oil – 1 tablespoon
Mustard seeds – ¼ teaspoon
Dried red chili – 1
Curry leaves – 4-5
Peanuts – 2 tablespoons
Turmeric powder – ¼ teaspoon
Jaggery – 1 teaspoon
Salt – to taste

Instructions

Dissolve the tamarind paste into 1 cup of hot water.

Dry roast the sesame seeds on medium heat till it get light brown. Remove it and let it cool.

Dry roast the spices listed under powder 2. Roast them till they get light brown. Keep stirring while you roast. Remove it let it cool.

Now coarsely grind the sesame seeds and keep it aside for garnishing.

Grind spices into a fine powder & keep it aside.

Heat the oil in a pan on medium heat & add mustard seeds. Let them pop. Add dry red chili, peanuts and curry leaves. Fry for a minute. Add tamarind water. Add spice powder, turmeric powder, jaggery and salt.
Mix well and let it cook.
Cook till it thicken and become a paste like consistency.
Then add cooked rice.
Mix gently till the paste is evenly mixed with the rice.

Garnish Tamarind Rice with sesame powder and serve.
