Pumpkin Dal kootu curry

 Pumpkin Dal kootu is a tasty disch .
This tasty dish goes well with hot rice .



4 cups of pumpkin , cut into 2 cm cubes1/2 cup toor dal
3 garlic pods, chopped
1 red onion chopped finely
1/2 teaspoon red chilli powder
1/2 teaspoon garam masala powder
Coriander leaves, chopped
Juice from 1/2 lemon

Salt to taste


for seasoning:

2-3 teaspoons oil
1 teaspoon mustard seeds
5 curry leaves, chopped
1/4 teaspoon asafoetida


Start with cooking the toor dal with 2 cups of water until it becomes soft .

Next , heat oil in a pan on medium, and add in the mustard seeds . Once They begin to crackle , mix in the curry leaves and asafoetida . Add in chopped onions and garlic , and sauté them well, until the onions turn soft .

Now add the diced yellow pumpkin, salt and chilli powder to the cooked onions and give everything a good stir .

Add in 1-2 teaspoon of water, reduce the heat, cover the pan with a lid and allow the pumpkin to cook for 7-10 minutes.

Finally, when the pumpkin is soft & cooked, add the cooked toor dal and garam masala. Add water if necessary to adjust the thickness and let everything boil for a few minutes

Take the curry off the heat and garnish it with chopped coriander.

Allow the curry to rest for about 5 minutes, add the juice of lime, mix well and serve it hot with rice.
